Since the day was being a wee bit psycho…
I began dehydrating some eggs. I decided to dehydrate raw eggs, although some people choose to dehydrate scrambled eggs. Please do some research on your own if you decide to do this. There is a wide range of posts out there with assorted recommendations! Since I’m doing this to have some eggs for baking only, I feel pretty sure about this technique. If you want to use them for scrambled eggs perhaps you should just use storebought. Salmonella and eggs can always be a concern.
My basic technique is easy. Crack eggs. Whisk. Pour into dehydrating trays. Turn on the dehydrator! Ta-da!
They’ll dry overnight and tomorrow I will run them through a blender and powder them. It will be stored in a mason jar. Chances are, I’ll never use them. If my chickens do run out of luck in the avian flu lottery… at least I will have a bit to tide me over while the next batch grows up.
P.S. One tablespoon of egg powder to two tablespoons of water.
