I forgot to include a class from the Wyoming Women in Ag conference that I thought you might appreciate. While I’ve done a fair bit of canning, I decided to attend the canning class. The other scheduled class was one geared to young producers, so I was prepared for a few women on the older side in this class.
It was the complete opposite! The class was packed with young women wanting to learn to can! All of the more experienced cooks took a step back and let the girls go!
They were making Cowboy Candy, a pickled jalapeño garnish.

It smelled quite wonderful, as I’m a fan of these sweet jalapeños. While they didn’t complete the water bath processing during class, the teachers continued on and managed to get most everyone a small jar of Cowboy Candy. Does it sound good to you?
